MORO RETURN TO WILDERNESS WITH THEIR FIRST EVER MOROCCAN THEMED SOUK DINING TENT 

Menu for their Moorish inspired feasts revealed 

Wilderness continue to delight festival goers’ taste buds with the return of the award-winning Moro restaurant to Cornbury Park on 10th – 12th August. Bringing a taste of the exotic to Wilderness with their stunning Souk dining tent, Sam and Sam Clark and the Moro team will be serving delicious Moorish inspired feasts every day of the festival. A separate menu including breakfast, a selection of tapas and mezze, all day mains andcocktails will also be available all weekend, complete with atmospheric tunes to complete the dining experience. 

Moro founder Sam Clark says: “We are really excited to be at the Wilderness Festival again, sharing our food in such a beautiful setting and in our shamelessly exotic and lush Moro Souk tent! 

“During Wilderness, the Moro team will be providing all-day delectable titbits, but in particular a sumptuous Feast which includes a mixed platter of charcoal grilled sardines, lamb chops and poussin with preserved lemon, red chilli and cumin, and to finish local strawberries marinated in Moscatel with anis biscuits.  

“We look forward to meeting and cooking for our fabulous festival goers.”

MORO FEASTS £35 with Complimentary glass of Tio Pepe fino sherry 

Spiced labneh (yoghurt cheese) and beetroot borani with marinated olives and crudités 

Salmorejo (gazpacho) with fried aubergine

A mixed plate of charcoal grilled sardines, lamb chops and poussins with preserved lemon, red chilli and cumin

With fried potatoes, coriander and spring onions with tahini sauce and Fattoush salad 

Strawberries marinated in Moscatel with anis biscuits 

THESE FEASTS WILL BE AVAILABLE FOR LUNCH AND DINNER ON FRIDAY, SATURDAY AND SUNDAY. 

Breakfast

Huevos rotos (served with or without chorizo)

Muesli with homemade yoghurt and date syrup (optional fresh fruit)

Pan con tomate

To Drink:

Ground coffee, fresh mint tea, fresh apple and orange juice 

Tapas and Mezze (all day)

Olives and pickles

Beetroot borani with feta and walnuts

Chicharrones – roast pork belly with cumin and lemon

Pastirma (spiced home-cured beef) with houmous and homemade pickles

Slow-cooked cauliflower with saffron, pine nuts and raisins

Patatas bravas

Boquerones (cured anchovies) 

All-Day Mains

Charcoal grilled chicken with chips and harissa

Spiced lamb with aubergine, pinenuts and mint on flatbread

Vegetable mezze 

As well as Moro, chefs Yotam Ottolenghi, Fergus Henderson and Valentine Warner will also be serving banquets over the weekend in a separate dining tent. 

The 2012 food offering at Wilderness will also include an immersive mix of talks, tastings, cookery lessons and workshops curated by local Cotswolds food school Thyme at Southrop Manor. The Thyme encampment will offer three days of total immersion in everything from market gardening to gourmet gastronomy.
